Banana Fritters (Senegal)

- Banana — to buy4
- Flour — to buy150g
- Sugar — to buy2 tbsp
- Neutral oil — to buy500ml
- Honey — to buy2 tbsp
Preparation
Choose very ripe bananas, almost speckled with black: they're sweeter and mash easily.
Mash them with a fork in a bowl until you get a purée with a few small chunks left.
Add the flour, sugar and a pinch of salt, mix with a spoon until you get a thick batter that holds together (add a bit more flour if too runny).
Heat the frying oil in a deep pan to about 170°C.
Shape small balls of batter with two tablespoons and slide them directly into the hot oil, without overcrowding the pan.
Fry 3-4 minutes, turning halfway, until nicely golden and puffed, cooked through.
Drain on paper towel, dust with sugar and serve hot, plain or with a drizzle of honey.
