- Yogurt — to buy400 g
- Cucumber — to buy1
- Garlic — to buy1 clove
- Fresh mint — to buy1 bunch
- Olive oil — to buy1 tbsp
- Salt — to buy1 pincée
Preparation
Coarsely grate the cucumber (no need to peel it if the skin is thin), then squeeze it firmly between your hands or in a clean cloth to remove as much water as possible — this is the key step for a cacik that doesn't turn watery on the plate.
Mix the yogurt with the crushed garlic, well-drained cucumber and finely chopped mint.
Season with salt and a drizzle of olive oil, mix well and taste to adjust — cacik should be well garlicky and fresh-tasting.
Let it rest for 15 minutes in the fridge if you have time, so the flavours meld, then serve well chilled alongside a grilled dish or with flatbread.
