- Bacon bits — to buy150 g
- Sausage — to buy4
- Onion — to buy1
- Garlic — to buy2 gousses
- Tomato paste — to buy2 tbsp
- White beans — to buy600 g
- Duck (confit) — to buy4 morceaux
- Stock — to buy500 ml
- Bouquet garni — to buy1
- Salt — to buya pinch
- Pepper — to buyto taste
Preparation
Fry the bacon lardons, sliced sausage and chopped onion in a large pot over medium heat, until nicely browned.
Add the crushed garlic and tomato paste, and stir for 1-2 minutes to cook the paste and develop the flavors.
Add the drained white beans, the duck confit pieces and the bouquet garni, then cover with stock.
Season lightly with salt (the confit is already salty, taste first), add pepper, bring to a boil and simmer covered for 1 hour over low heat, stirring gently now and then so you don't mash the beans.
Uncover and continue cooking for 20-30 minutes, until the top forms a golden crust and the juices have reduced nicely.
Remove the bouquet garni and serve piping hot straight from the pot.
