- Rice — to buy350 g
- Feuilles de manioc pilées — to buy200 g
- Viande fumée — to buy250 g
- Palm oil — to buy3 tbsp
- Onion — to buy1
- Chili pepper — to buy1
- Tomato — to buy2
Preparation
Cut the smoked meat into small cubes and fry it 4 minutes in the hot palm oil to flavour it well.
Add the sliced onion and chili, sweat 3 minutes, then stir in the diced tomato and let it stew for 5 minutes.
Add the pounded cassava leaves and mix well to coat them in the sauce.
Pour in 600 ml of water, season with salt, bring to a boil then simmer for 10 minutes so the flavours meld.
Add the rinsed rice straight into the pot, stir, cover and cook over low heat for 18-20 minutes without lifting the lid.
Check the rice is cooked: the grains should be tender and have absorbed all the green sauce.
Let it rest covered for 5 minutes, fluff with a fork and serve this typically Liberian green rice piping hot.
