- Tortilla — to buy150 g tortilla chips
- Olive oil — to buya drizzle
- Egg — to buy2
- Red onion — to buy1/2
- Chili pepper — to buy1
- Fresh cilantro — to buya handful
- Lime — to buy1
- Cheese — to buy50 g
Preparation
Thinly slice the red onion and chili (deseed for less heat), then chop the cilantro. Squeeze the lime.
Heat a drizzle of oil in a large pan over medium heat, add the tortilla chips and warm them for 2-3 minutes, stirring, just enough to heat through without softening: they should stay crisp.
Meanwhile, in another pan with a little oil, crack the eggs and fry them for 3-4 minutes over low heat (set whites, runny yolk) or scramble them gently to your liking.
Spread the warm chips on plates, drizzle with the lime juice, then scatter over the red onion, chili and cilantro.
Top with the eggs, crumble the cheese generously over everything, and serve right away while the chips are still crisp — chilaquiles wait for no one!
