- Chicken — to buy2 filets
- Bell pepper — to buy2
- Onion — to buy1
- Lime — to buy1
- Cumin — to buy1 tsp
- Neutral oil — to buy2 tbsp
- Tortilla — to buy8
- Cream — to buy100g
- Cheese — to buy80g
Preparation
Cut the chicken into thin, even strips, the bell pepper into strips, and the onion into thin slices.
Marinate the chicken for 10 minutes in a bowl with the lime juice and cumin, stirring to coat evenly.
Heat the oil over high heat in a large pan or wok, and stir-fry the marinated chicken for 5-6 minutes, stirring regularly, until nicely browned outside and cooked through. Set aside on a plate.
In the same pan (don't wash it, to keep the flavourful bits), stir-fry the bell pepper and onion for 4-5 minutes over high heat, until tender but still a little crisp.
Return the chicken to the pan, toss for 1 minute to reheat everything, and serve immediately with warm tortillas, sour cream and grated cheese to build at the table.
