- Black-eyed peas — to buy300 g
- Onion — to buy1
- Garlic — to buy2 cloves
- Palm oil — to buy3 tbsp
- Tomato — to buy3
- Stock — to buy500 ml
- Chili pepper — to buy1
- Rice — to buy300 g
- Plantain — to buy2
Preparation
Soak the black-eyed peas the night before, or use already-cooked beans to save time.
Cook the onion and garlic in palm oil, add the chopped tomatoes, let simmer 5 minutes.
Add the beans and cover with broth, cover and simmer 45 minutes (or 15 minutes if already cooked), until the beans are very tender and the sauce has thickened.
Add the whole chilli to flavour without too much heat, remove it at the end of cooking.
Serve hot with rice or fried plantain.
