Halászlé (Hungarian paprika fish soup)

- White fish fillet — to buy800 g
- Onion — to buy400 g
- Paprika — to buy3 tbsp
- Bell pepper — to buy1
- Tomato — to buy2
- Stock — to buy1 l
Preparation
Cut the fish into large pieces and finely slice the onions.
In a large pot, sweat the onions for 15 minutes over low heat in a little oil until very soft.
Take the pot off the heat, stir in the paprika quickly so it doesn't burn.
Add the diced pepper and tomatoes, put back on the heat and cook for 5 minutes.
Pour in the stock, bring to a simmer, season with salt and simmer for 20 minutes so the base infuses well.
Add the fish pieces and poach gently for 10-12 minutes over low heat, stirring carefully so they don't break apart.
Taste, adjust the paprika and salt, and serve hot with fresh bread.
