- Cassava flour — to buy300g
- Farine de maïs (semoule fine) — to buy100g
- Salt — to buy1 pinch
Preparation
Bring a large amount of water to a boil in a heavy-bottomed pot.
Pour the cassava flour into the boiling water in a thin stream while whisking vigorously to avoid lumps.
Add the corn flour little by little, still stirring vigorously with a wooden spoon.
Lower the heat and keep stirring and pressing the dough against the sides of the pot for 10 minutes, until you get a smooth, elastic, well-combined dough — that vigorous work is what gives fufu its signature texture.
Shape into balls with a spoon dipped in cold water (to keep it from sticking) and serve right away, hot, alongside a sauce.
