Ingredients
- Ground beef — to buy500 g
- Onion — to buy1
- Parsley — to buy1 bunch
- Cumin — to buy1 tsp
- Paprika — to buy1 tsp
- Garlic — to buy2 cloves
- Egg — to buy1
- Bread — to buy1 slice
- Neutral oil — to buy2 tbsp
- Salt — to buy1 pincée
- Pepper — to buy1 pincée
Preparation
Crumble the slice of bread and soak it for 5 minutes in a little water or milk, then squeeze it firmly to remove excess moisture — this is what keeps the köfte moist as they cook instead of drying out.
Mix the ground meat with the grated onion, crushed garlic, chopped parsley, cumin, paprika, egg, squeezed bread, salt and pepper. Knead by hand for a few minutes until you get a smooth, slightly sticky mixture.
Cover and let it rest for 15 minutes in the fridge if you have time: the meat firms up and the köfte hold together better while cooking.
Shape small oblong patties between damp palms, pressing firmly so they hold together while cooking.
Heat the oil in a pan over medium-high heat and brown the köfte for 3-4 minutes per side, without turning them too often, until nicely coloured outside and cooked through.
Serve hot with a salad, rice or flatbread, and maybe a little yogurt on the side to soften the spice.
