Uzbek lagman (stir-fried lamb noodles)

- Lamb — to buy400 g
- Onion — to buy1
- Garlic — to buy3 cloves
- Bell pepper — to buy1
- Carrot — to buy1
- Tomato — to buy3
- Cumin — to buy1 tsp
- Wheat noodles — to buy400 g
- Fresh cilantro — to buy1/2 bunch
- Olive oil — to buy2 tbsp
Preparation
Cut the lamb into thin strips, brown for 5 minutes in hot oil until golden.
Add the sliced onion and garlic, cook for 3 minutes, then add the pepper and carrot cut into sticks, stir-fry for 5 minutes.
Add the chopped tomato and cumin, simmer for 15 minutes over low heat until you get a thick, fragrant sauce.
Meanwhile, cook the wheat noodles in a large pot of salted boiling water for the time indicated, until al dente, then drain.
Add the drained noodles to the sauce, mix well so every strand is coated.
Serve immediately, sprinkled with chopped fresh coriander.
