Ingredients
- Flour — to buy250g
- Baking powder — to buy1 c. à c.
- Neutral oil — to buy500ml
- Honey — to buy4 tbsp
- Cinnamon — to buy1 tsp
Preparation
In a large bowl, mix the flour, baking powder and a pinch of salt, then add warm water little by little while whisking, until you get a fairly runny batter, almost like a thick crepe batter, with no lumps.
Cover the bowl with a cloth and let the batter rest for 30 minutes at room temperature: it should become slightly frothy with small bubbles on the surface.
Heat the frying oil to 170-180°C in a deep saucepan.
Wet two tablespoons in a glass of water (this stops the batter sticking to them), shape small balls of batter with the spoons and slide them directly into the hot oil, without overcrowding the pan.
Fry for 3-4 minutes, turning them halfway with a slotted spoon, until nicely golden and puffed.
Drain on paper towel and drizzle generously with warm honey and a little cinnamon before serving right away, hot and crisp.
