- Flour — to buy500 g
- Sugar — to buy80 g
- Baking powder — to buy2 tsp
- Cardamom — to buy4 pods
- Coconut milk — to buy200 ml
- Neutral oil — to buy1 L (frying)
- Sucre glace — to buy1 tbsp
Preparation
Mix the flour, sugar, baking powder, ground cardamom and a pinch of salt in a bowl.
Add the coconut milk and knead until you get a soft dough that no longer sticks to your fingers, adding a little flour if needed.
Cover and let the dough rest for 20 minutes at room temperature.
Roll out the dough to 1 cm thickness and cut into triangles or diamonds.
Heat the frying oil to 160°C and fry the mandazi in small batches for 3-4 minutes, turning them, until golden and puffed up.
Drain on paper towel and serve warm, plain or dusted with icing sugar.
