- White fish fillet — to buy1.2 kg (whole)
- Olive oil — to buy4 tbsp
- Turmeric — to buy1 tsp
- Cumin — to buy1 tsp
- Paprika — to buy1 tsp
- Garlic — to buy3 cloves
- Lemon — to buy2
- Onion — to buy1
Preparation
Split the whole fish in two lengthwise without separating the fillets, so it can be opened flat like a book.
Make a marinade with the oil, turmeric, cumin, paprika, crushed garlic and lemon juice, brush it generously over both sides of the fish.
Let marinate 20 minutes so the spices penetrate the flesh.
Grill the fish flesh-side to the heat first, at medium distance from embers or a hot grill, for 15-20 minutes depending on thickness, until the flesh flakes easily.
Finish skin-side to the heat for a few minutes to crisp it up, then serve at once with onion and lemon.
