Moi moi, steamed bean pudding (Nigeria)

Ingredients
- Black-eyed peas — to buy300 g
- Onion — to buy1
- Bell pepper — to buy1
- Palm oil — to buy3 tbsp
- Stock — to buy100 ml
- Salt — to buy1 tsp
- Egg — to buy1
Preparation
Soak the black-eyed peas for 2 hours in cold water, then rub them between your hands under running water to remove as many skins as possible: they would make the moi moi grainy.
Drain the beans and blend them with the onion, bell pepper and a little water until you get a smooth, airy paste.
Add the palm oil, stock, salt and egg to the paste, whisk vigorously for 1-2 minutes: it's this beaten-in air that makes moi moi fluffy once cooked.
Divide the batter among ramekins or seal it in buttered foil parcels, filling them two-thirds full to leave room for rising.
Set the ramekins in a large pot and pour hot water halfway up their sides (a gentle steam bath, just like for a custard).
Cover and cook over medium heat for 45-50 minutes, checking the water level regularly, until a knife inserted comes out clean.
Let cool for 10 minutes before unmoulding and serve as a side or a light dish with bread.
