Pancit canton, Filipino stir-fried noodles

Ingredients
- Wheat noodles — to buy300 g
- Neutral oil — to buy3 tbsp
- Garlic — to buy3 cloves
- Onion — to buy1
- Chicken — to buy300 g
- Carrot — to buy1
- White cabbage — to buy200 g
- Soy sauce — to buy3 tbsp
- Oyster sauce — to buy2 tbsp
- Stock — to buy150 ml
- Lime — to buy1
Preparation
Soak the wheat noodles for a few minutes in warm water, just to soften them (they'll finish cooking in the pan), then drain them.
Heat the neutral oil in a wok or large pan and cook the sliced garlic and onion for 2 minutes until fragrant.
Add the sliced chicken and cook for 4-5 minutes until browned and cooked through.
Add the sliced carrot and cabbage, stir-fry for 3 minutes over high heat until tender but still crisp.
Add the drained noodles, soy sauce and oyster sauce, mix well with a spatula to coat all the noodles evenly.
Pour in a little stock bit by bit and keep stir-frying for 3-4 minutes, until the noodles have absorbed the liquid and are tender.
Adjust the seasoning, add a squeeze of lime just before serving and serve immediately, piping hot.
