- Rice — to buy300g
- Braising beef — to buy500g
- Onion — to buy2
- Cinnamon — to buy1 stick
- Clove — to buy4
- Cumin — to buy1 tsp
- Stock — to buy500ml
Preparation
Cook the sliced onions in the oil for 8-10 minutes until nicely browned and caramelised — this caramelisation is what gives pilau its signature brown colour.
Add the meat and brown it on all sides with the cinnamon, cloves and cumin, to flavour the meat well.
Add the rice and mix so it is well coated in the spices and cooking juices.
Pour in the hot stock to cover, bring to a boil then simmer covered for 25 minutes over low heat, without stirring, until the rice has absorbed all the liquid.
Let rest off the heat, covered, for 5 minutes before fluffing with a fork and serving.
