- Chicken — to buy800 g
- Milk — to buy300ml

Preparation
Cut the chicken into pieces and marinate for at least 1 hour, ideally overnight in the fridge, in milk with a splash of lemon — this tangy marinade tenderizes the meat deeply and flavours it through and through, don't skip this step.
Drain the chicken, keeping a little of the milk aside, then coat each piece in a mix of flour, paprika and salt, pressing firmly so the coating sticks all over.
Quickly dip each coated piece back into the reserved milk, then dredge it a second time in the flour — this double coating creates the thick, craggy crust that's typical of American fried chicken.
Heat the oil over medium heat in a deep pan or pot (about 170°C — a small piece of bread should sizzle instantly) and fry the chicken for 12-15 minutes, turning regularly, until golden and cooked through (the juices should run clear when pierced).
Drain on paper towel or a rack for a few minutes before serving — the crispiness settles as it cools slightly, so don't cover it or the steam will soften the coating.
