- Flour — to buy400 g
- Sugar — to buy80 g
- Baker's yeast — to buy7 g
- Noix de muscade — to buy1/4 tsp
- Salt — to buy1 pinch
- Neutral oil — to buy500 ml (for frying)
Preparation
In a large bowl, mix the flour, sugar, yeast, nutmeg and salt.
Add the warm water little by little while whisking, until you get a smooth, sticky, lump-free batter, a bit runnier than a thick pancake batter.
Cover with a towel and let it rise for 1 hour in a warm spot, until the batter doubles in volume and bubbles form on the surface.
Heat the neutral oil in a deep pot to about 170°C.
Scoop small portions of batter with a lightly wet hand (or two spoons) and let them slide directly into the hot oil, forming irregular balls.
Fry for 3-4 minutes, turning regularly, until golden and puffed up.
Drain on paper towel and optionally roll in a little sugar before serving warm.
