- Lamb — to buy1.2 kg (leg)
- Garlic — to buy3 cloves
- Cumin — to buy1 tsp
- Cinnamon — to buy1 tsp
- Turmeric — to buy1 tsp
- Stock — to buy700 ml
- Onion — to buy1
- Olive oil — to buy2 tbsp
- Rice — to buy300 g
- Raisins — to buy50 g
- Almonds — to buy40 g
Preparation
Rub the leg of lamb with crushed garlic, cumin, cinnamon, turmeric, salt and pepper, then let marinate at least 1 hour in the fridge.
Place the lamb in a dish with a little broth at the bottom, cover with foil and roast 2 hours at 160°C (320°F), until the meat easily comes off the bone.
Meanwhile, cook the onion in oil, add the rinsed rice, raisins and almonds, add broth and cook covered 18 minutes on low heat.
Uncover the lamb for the last 20 minutes of cooking so it browns nicely on top.
Spread the spiced rice on a large platter, place the lamb on top and serve with the cooking juices.
