- Pumpkin — to buy800 g
- Peanut paste — to buy3 tbsp
- Sugar — to buy1 tbsp
- Salt — to buy1 pincée
- Water — to buy100 ml
Preparation
Peel the pumpkin and cut it into large cubes.
Place the cubes in a pot, barely cover with water, season lightly with salt and bring to the boil.
Cook covered over medium heat for 20-25 minutes until the pumpkin is very tender and falls apart with a fork.
Drain, reserving a little of the cooking water, then mash the pumpkin into a coarse purée right in the pot.
Add the peanut paste and stir vigorously over low heat until well incorporated and the mash turns creamy (add a little reserved cooking water if it's too thick).
Taste: nhopi is traditionally eaten slightly sweet, so add a little sugar if you like, and adjust the salt.
Serve hot, as a side or as a simple meal with bread.
