Bariis iyo digir (spiced rice with beans)

Ingredients
- Rice — to buy300 g
- Kidney beans — to buy300 g
- Onion — to buy1
- Garlic — to buy2 cloves
- Cumin — to buy1 tsp
- Cinnamon — to buy1 stick
- Neutral oil — to buy2 tbsp
- Stock — to buy500 ml
- Salt — to buy1 pincée
Preparation
Rinse the rice in cold water until it runs almost clear.
Heat the oil in a pot, sauté the sliced onion for 5 minutes until translucent.
Add the crushed garlic, cumin and cinnamon, and cook for 1 minute until the spices are fragrant.
Add the rice and stir for 1-2 minutes to coat it well with the spices.
Pour in the hot stock, season with salt, bring to the boil then cover and turn the heat to the lowest setting, cook for 15-18 minutes without lifting the lid.
Meanwhile, reheat the cooked red beans in a small pot with a little of their cooking liquid.
Once the rice is cooked, let it rest covered for 5 minutes, fluff it with a fork then gently fold in the hot beans.
Serve hot: this simple, fragrant dish traditionally accompanies grilled meats or stews.
