Ingredients
- Sago pearls — to buy60 g
- Bread — to buy2 slices
- Coconut milk — to buy400 ml
- Palm sugar — to buy100 g
- Gélatine (feuilles) — to buy2 sheets
Preparation
Soak the sago pearls in cold water for 10 minutes then cook them in boiling water for 10-12 minutes until translucent, drain and rinse with cold water.
Cut the bread into small cubes and lightly dry-toast them in a pan so they stay soft without turning mushy once soaked.
Heat the coconut milk with the palm sugar until fully dissolved, let cool then chill.
Prepare a simple jelly by melting the gelatin in a little hot water, pour into a shallow dish and let it set in the fridge, then cut into small colorful cubes.
In glasses, divide the bread cubes, sago pearls and jelly cubes.
Pour the cold sweetened coconut milk over them and add a few crushed ice cubes.
Serve immediately, well chilled, it is the refreshing dessert iconic of Yangon's streets in the hot season.
