- Onion — to buy1
- Sausage — to buy150 g
- Ham — to buy150 g
- Tomato paste — to buy2 tbsp
- Stock — to buy1.5 L
- Gherkin — to buy4
- Olives — to buy100 g
- Lemon — to buy1
- Salt — to buy1 tsp
- Pepper — to buy1 pinch
- Cream — to buy100 ml
- Dill — to buy1 bunch
- Neutral oil — to buy2 tbsp
Preparation
Heat a little oil in a large pot and cook the sliced onion for 5 minutes until translucent.
Add the diced sausage and ham, lightly brown them for 5 minutes to develop their flavour.
Add the tomato paste, mix and cook for 2 minutes.
Pour in the stock, add the diced pickles and olives, bring to a boil then simmer uncovered for 20 minutes over low heat, so all the flavours meld together.
Add a splash of pickle brine or vinegar to bring out solianka's characteristic tang, taste and adjust to your liking.
Adjust the salt and pepper, simmer for another 5 minutes.
Serve piping hot, topped with a slice of lemon, a spoonful of sour cream and freshly chopped dill.
