Ingredients
- Beef steak — to buy600 g
- Peanuts — to buy100 g
- Paprika — to buy1 tbsp
- Ginger — to buy1 tsp
- Chili pepper — to buy1 tsp
- Neutral oil — to buy3 tbsp
- Onion — to buy1
- Tomato — to buy2
Preparation
Cut the beef into thin, even slices (the thinner the meat, the more flavour it absorbs and the faster it cooks) and thread them onto skewers.
Toast the peanuts for 2-3 minutes in a dry pan until fragrant, then coarsely grind them with the paprika, ground ginger and chilli to make yaji, the spice blend that defines suya.
Brush the skewers generously with neutral oil, then coat them evenly with the yaji mix, pressing so it sticks well.
Let them marinate in the fridge for at least 30 minutes so the spices penetrate the meat.
Heat a grill or a very hot griddle pan.
Grill the skewers for 3-4 minutes per side, until the meat is well seared outside but still juicy inside.
Serve immediately with raw onion and tomato slices and extra yaji on the side.
