Preparation
Preheat the oven to 240 °C (465 °F) or higher if possible, with the baking sheet inside so it gets very hot.
Roll the dough out as thinly as possible on a floured sheet of baking paper (for a proper tarte flambée it should be almost translucent).
Spread generously with crème fraîche using the back of a spoon, leaving a small border all around.
Scatter the thinly sliced onion and bacon lardons all over, season lightly with salt (the lardons are already salty) and pepper.
Slide the tart with its paper onto the hot baking sheet and bake for 10 to 12 minutes, until the edges are crisp and lightly coloured.
Serve right away, cut into slices, while still crisp.
