- Kidney beans — to buy300 g cooked

- Ground beef — to buy400 g

Preparation
Soak the kidney beans overnight if starting from dried beans, then cook them in water with a piece of onion until very tender.
Cook the white rice the classic way, in twice its volume of salted water.
Sauté the ground beef with onion, garlic and diced tomato until the meat is fully cooked and lightly caramelized.
Brown the chorizo slices in a pan for 5-6 minutes, set aside.
Cut the ripe plantains into thick diagonal slices and fry them in hot oil until golden, drain on paper towel.
Fry the eggs sunny-side up, whites set and yolks still runny.
Plate generously: rice, beans, ground beef, chorizo, fried plantain, sliced avocado and the fried egg on top, the hearty signature dish of Antioquia.
