Ingredients
- Flour — to buy500 g
- Egg — to buy4
- Milk — to buy25 cl
- Butter — to buy250 g
- Baker's yeast — to buy10 g
- Vanilla pod — to buy1
- Sugar — to buy200 g
Preparation
Dissolve the yeast in warm milk with a pinch of sugar and let sit for 10 minutes, until it foams slightly.
In a large bowl, mix the flour, eggs, warm melted butter, vanilla and a pinch of salt, then stir in the milk-yeast mixture.
Knead the dough by hand for 5 minutes: it should become smooth and elastic, almost like a brioche dough.
Cover with a towel and let rise for 1 hour at room temperature, until the dough has doubled in size.
Gently fold in the pearl sugar without overworking the dough, so it stays in whole chunks.
Shape balls of dough, place them in a hot, oiled waffle iron, and cook for 3 to 4 minutes until the pearl sugar caramelizes on the surface.
Carefully unmold and let cool on a rack before eating: the caramelized sugar turns crisp outside while the crumb stays soft inside.
