Ingredients

- Dried hibiscus flower — to buy50g
- Sugar — to buy150g
- Fresh mint — to buy1 bunch
Preparation
Bring 1.5 litres of water to a boil, then pour it boiling hot over the dried hibiscus flowers in a large container.
Let it steep at least 30 minutes (up to 1 hour for a stronger taste), until the liquid turns a deep red colour with a strong tangy aroma.
Strain to remove the flowers, pressing a little to extract all the juice, then add the sugar while the liquid is still hot so it dissolves completely.
Let it cool completely at room temperature, then refrigerate for at least 2 hours.
Add the chopped fresh mint just before serving, so it keeps all its aroma.
Serve well chilled, with ice cubes: bissap is a traditional refreshing drink, both tangy and sweet, perfect with a spicy meal.
