- Flour — to buy250 g
- Sugar — to buy1 tbsp
- Salt — to buy1 pinch
- Baking powder — to buy1 tsp
- Milk — to buy400 ml
- Egg — to buy2
- Butter — to buy30 g
- Neutral oil — to buy1 tbsp (for cooking)
- Cream — to buy100 ml (to serve)
- Dill — to buy1 bunch (to serve)
Preparation
Mix the flour, sugar, salt and baking powder in a bowl.
Warm the milk slightly, then whisk it with the eggs and melted butter.
Pour the liquids over the dry ingredients and whisk briskly to get a smooth, runny, lump-free batter; let it rest for 15 minutes at room temperature to relax.
Heat a lightly oiled pan over medium heat.
Pour a small ladleful of batter per blini and cook for 1-2 minutes, until small bubbles form on the surface and the edges lift.
Flip gently and cook for another minute on the other side, until golden.
Stack the blinis as you go under a towel to keep them soft, and serve warm with sour cream and dill, or a sweet topping of your choice.
