Preparation
Lightly prick each sausage in 2-3 places with a fork: this stops them bursting while cooking as steam escapes.
In a large pan, pour in the beer and add the sliced onion, bring to a simmer then drop in the sausages; poach for 10 minutes covered over low heat. This traditional step flavours the sausages and keeps them nice and juicy before grilling.
Drain the sausages and onion, keeping the poaching liquid aside.
Heat a pan or grill over high heat with a little butter, then brown the sausages for 8-10 minutes, turning them regularly, until nicely coloured all over.
In the same pan, cook the drained onion for 4-5 minutes until golden.
Warm the bread briefly in the oven or toaster.
Serve the hot sausages with the onion, a generous spoonful of mustard and the bread.
