- Chili pepper — to buy2
- Vinegar — to buy1 tbsp
Preparation
Take the wings out of the fridge 15 minutes before cooking and pat them dry with paper towel — dry skin is the key to crispness in the oven.
Season with salt on both sides, arrange on a rack set over a baking tray (so air circulates underneath and the skin crisps all over), and bake for 40-45 minutes at 200°C, turning halfway through.
Meanwhile, melt the butter over low heat in a saucepan, add the chili and vinegar, stir, and let it cool off the heat — classic buffalo sauce is simply melted butter, hot sauce and vinegar.
Once the wings are golden and crisp, toss them while still hot in the sauce, mixing well so each one is generously coated — do this just before serving so the skin doesn't go soft.
Serve immediately with fresh celery sticks and a blue cheese or ranch dip to cool the heat.
