- Porc haché — to buy500 g
- Milk — to buy200 ml
- Onion — to buy1, haché
- Cinnamon — to buy1 pincée
- Clove — to buy1 pincée moulu
- Salt — to buy1 c. à c.
- Pepper — to buy1 pincée
Preparation
In a pot, mix the ground pork with the milk, finely chopped onion, cinnamon and ground cloves, salt and pepper.
Bring gently to a simmer over medium-low heat, breaking up the meat well with a wooden spoon.
Lower the heat to minimum and simmer uncovered for 1 to 1 hour 15 minutes, stirring regularly so it doesn''t stick, until almost all the liquid is absorbed and the mixture is smooth.
Taste and adjust seasoning: cretons should be well seasoned, as they''re eaten cold on bread.
Spoon into small ramekins or a terrine, smooth the surface, and let cool at room temperature.
Cover and refrigerate for at least 4 hours, until firm and easy to spread.
