- Chicken — to buy500 g
- Coconut milk — to buy400 ml
- Curry powder — to buy2 tbsp
- Onion — to buy1
- Ginger — to buy1 piece
- Tomato — to buy2
- Salt — to buya pinch
Preparation
Cut the chicken into even pieces. Finely slice the onion and ginger.
Cook the onion in a drizzle of oil for 5 minutes over medium heat, until translucent.
Add the ginger and curry powder, cook for 1 minute, stirring, until the spices smell fragrant: don't let them burn, or they'll turn bitter.
Add the chicken and brown it for 5 minutes on all sides over high heat.
Add the diced tomatoes, coconut milk and a pinch of salt, stir well to lift the browned bits from the bottom of the pan.
Simmer uncovered for 20 minutes over low heat, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.
Taste, adjust the seasoning, and serve with steamed rice, optionally sprinkled with fresh cilantro.
