Dobos torte (Hungarian caramel layer cake)

Ingredients

- Sugar — to buy250 g
- Flour — to buy150 g
- Butter — to buy200 g
- Chocolate — to buy150 g
Preparation
Preheat the oven to 200°C. Separate the whites from the yolks of 6 eggs.
Whisk the yolks with half the sugar until pale, then fold in the sifted flour.
Whip the whites to stiff peaks with the remaining sugar, then fold them gently into the batter.
Spread a thin layer of batter on a baking sheet lined with parchment paper and bake for 5-6 minutes; repeat to get 6 thin layers.
Melt the chocolate and whisk it with the softened butter until you get a smooth, airy buttercream.
Stack the layers, spreading chocolate cream between each, using all but one layer.
Make a dry caramel with the remaining sugar, pour it over the last layer and quickly cut it into wedges before it hardens, to form the crackly top.
Coat the sides of the cake with the remaining cream, arrange the caramel wedges on top and let it set for 2 hours in the fridge before serving.
