- Plantain — to buy4
- Ginger — to buy20 g
- Chili pepper — to buy1
- Cinnamon — to buy1 pinch
- Neutral oil — to buy500 ml (for frying)
- Peanuts — to buy30 g
Preparation
Peel the very ripe plantains (the skin should be largely blackened, a sign they're sweet enough) and cut into cubes or sticks.
Blend the ginger, chilli and a pinch of cinnamon with a little water to make a fragrant spiced paste.
Pour this paste over the plantain pieces, mix well to coat them fully, marinate for 10 minutes.
Heat the frying oil to 175°C.
Fry the marinated plantain pieces in small batches for 3-4 minutes, until nicely golden and caramelised on the surface.
Drain on paper towel and serve immediately, sprinkled with crushed peanuts if you like the crunch.
