- Bulgur wheat — to buy300 g
- Ground beef — to buy400 g
- Turmeric — to buy1/2 tsp
- Onion — to buy1
- Olive oil — to buy3 tbsp + for frying
- Cinnamon — to buy1/2 tsp
- Cumin — to buy1/2 tsp
- Pine nuts — to buy30 g
- Lemon — to buy1
Preparation
Soak the fine bulgur 10 minutes in hot water, drain well then blend it with a little raw ground beef and a pinch of turmeric until you get a smooth, pliable dough: this is the shell that will hold together during cooking.
Make the filling: cook the onion in oil, add the rest of the ground beef, cinnamon, cumin and pine nuts, cook 5 minutes.
Wet your hands, take a ball of bulgur dough, hollow it into a shell shape with your thumb, fill with filling then close into a smooth oval ball.
Fry the kubba 5-6 minutes in hot oil, turning them, until golden and crisp outside, soft inside.
Drain on paper towel and serve hot with lemon.
