- Egg — to buy6
- Spinach — to buy200g
- Parsley — to buy1 bunch
- Fresh cilantro — to buy1 bunch
- Dill — to buy1 bunch
- Baking powder — to buy1 tsp
- Walnuts — to buy50g
Preparation
Finely chop all the herbs (spinach, parsley, cilantro, dill) — the finer they are, the more even and green the kuku will be.
Beat the eggs with the baking powder, salt and pepper, then fold in all the chopped herbs and crushed walnuts.
Pour the mixture into a hot, oiled pan, lower the heat and cover.
Cook covered for 15 minutes over very low heat, until the top is nearly set.
Flip the kuku using a plate (like a Spanish tortilla) and cook 5-8 more minutes on the other side, until nicely golden.
Let cool slightly before cutting into wedges, serve with bread and yogurt.
