Mici (Romanian grilled meat rolls)

- Ground beef — to buy500 g
- Pork — to buy300 g
- Garlic — to buy4 cloves
- Cumin — to buy1 tsp
- Stock — to buy100 ml
- Salt — to buy1 tsp
Preparation
In a large bowl, mix the minced beef and pork with the crushed garlic, cumin and a generous pinch of salt.
Pour in the stock little by little while kneading the meat by hand for 5 minutes, until you get an even, slightly sticky texture.
Cover the bowl and let it rest in the fridge for at least 4 hours, ideally overnight: this rest is what develops the typical mici texture.
Shape the mixture into small, even logs about 8 cm long and 2.5 cm thick, with lightly oiled hands.
Heat a grill or griddle pan over high heat.
Grill the mici for 10-12 minutes, turning regularly, until nicely browned and cooked through.
Serve immediately with mustard and bread: a classic of summer grilling in Romania.
