Mie goreng (Indonesian fried noodles)

Ingredients
- Wheat noodles — to buy300 g
- Olive oil — to buy2 c. à s.
- Egg — to buy2
- Garlic — to buy2 gousses
- Onion — to buy1
- Chicken — to buy200 g
- White cabbage — to buy150 g
- Soy sauce — to buy3 c. à s.
- Chili pepper — to buy1
- Spring onion — to buy2
Preparation
Cook the wheat noodles in boiling water for 2-3 minutes less than the pack instructions, so they stay firm: they'll finish cooking in the wok. Drain and set aside.
Heat the oil in a wok or large pan over high heat, crack in the eggs and scramble quickly, then push to the side and set aside.
In the same wok, sauté the chopped garlic and onion for 2 minutes, until fragrant.
Add the chicken, cut into small pieces, and brown for 4-5 minutes over high heat.
Add the shredded cabbage and stir-fry for 2-3 minutes, until it just starts to soften while staying crunchy.
Add the drained noodles, soy sauce and sliced chilli, and stir-fry for 3-4 minutes, stirring constantly, until the noodles are well coated and lightly coloured.
Return the scrambled eggs to the wok, mix, and serve immediately, piping hot, with spring onion.
