Mkatra Foutra (Comorian Rice Pancake)

Ingredients

- Rice flour — to buy300 g
- Banana — to buy1 (very ripe)
- Coconut milk — to buy200 ml
- Sugar — to buy1 tbsp
- Baker's yeast — to buy1 tsp
- Salt — to buy1 pinch
- Neutral oil — to buy2 tbsp (for cooking)
Preparation
Mash the very ripe banana with a fork until smooth.
In a bowl, mix the rice flour, sugar, yeast and salt.
Add the banana purée and coconut milk, and whisk until you get a smooth, thick pancake batter with no lumps.
Cover with a cloth and let the batter rest for 30 minutes at room temperature — it will puff up slightly thanks to the yeast.
Heat a pan with a drizzle of oil over medium heat, pour in a ladle of batter and spread it slightly into a thick pancake about 1 cm high.
Cook for 3-4 minutes until bubbles form on the surface and the edges lift away, then flip and cook for another 2-3 minutes until golden.
Serve warm, plain or with a little honey or jam.
