Ingredients
- Neutral oil — to buy2 tbsp
- Garlic — to buy2 gousses
- Onion — to buy1
- Chicken — to buy200 g
- Rice — to buy400 g cooked
- Soy sauce — to buy2 tbsp
- Chili pepper — to buy1
- Egg — to buy4
Preparation
Heat the oil in a wok or large pan over medium-high heat, then fry the sliced garlic and onion for 2-3 minutes, until soft and lightly golden.
Add the chicken cut into small pieces and brown for 4-5 minutes over high heat, stirring occasionally, until fully cooked.
Add the cold, day-old rice (this matters: hot or freshly cooked rice would make the dish mushy), breaking it up with a spatula to separate every grain.
Drizzle with soy sauce, add the sliced chili, and stir-fry over high heat for 3-4 minutes, stirring often, until the rice is nicely colored and fragrant.
Meanwhile, fry the eggs sunny-side up in a separate pan with a little oil over medium heat, until the white is set and the yolk still runny.
Taste the rice and adjust the soy sauce seasoning if needed.
Serve right away with a fried egg on top of each plate.
