Poached eggs in sesame broth

- Egg — to buy4
- Vinegar — to buy1 tbsp
- Stock — to buy800 ml
- Sesame oil — to buy1 tbsp
- Soy sauce — to buy1 tbsp
- Sesame seeds — to buy1 tsp
- Spring onion — to buy2
Preparation
Bring a pot of water to the boil, then add a spoonful of white vinegar.
Crack each egg into a small ramekin so it can slide easily into the water.
Create a whirlpool in the simmering water and gently slide the egg into the centre, cook for 3 minutes.
Lift the poached egg out with a slotted spoon and place it on paper towel.
Heat the broth with a drizzle of sesame oil and the soy sauce.
Pour the hot broth into four bowls.
Place a poached egg in each bowl, scatter with sesame seeds and spring onion.
Serve immediately, while the yolk is still runny.
