Paški sir tasting plate with honey and olives

Ingredients
- Cheese — to buy300 g (Paški sir or aged sheep's milk cheese)
- Honey — to buy2 tbsp
- Olive oil — to buy2 tbsp
- Bread — to buy1/2 country loaf
- Olives — to buy100 g
- Pepper — to buyto taste
Preparation
Take the Paški sir out of the fridge at least 30 minutes before serving: this aged sheep's milk cheese, made on the island of Pag battered by the bora wind and sea salt, reveals all its aromas at room temperature.
Cut the cheese into thin triangles about 1 cm thick with a sharp knife: its firm, slightly crystalline texture, close to an aged pecorino, slices easily once at the right temperature.
Arrange the slices in a fan on a wooden board, leaving space between each piece so they don't stick together.
Add a few Dalmatian black olives and thin slices of lightly toasted country bread around the cheese.
Drizzle generously with extra virgin olive oil and a trickle of rosemary honey, which beautifully softens the salty, tangy character of the aged cheese.
Finish with a few turns of the pepper mill and serve right away, with a glass of Dalmatian red wine for the traditional pairing.
