Preparation
Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment.
Generously dust the work surface with sugar, lay the puff pastry on top and dust with more sugar, pressing lightly with the rolling pin to help it stick.
Roll the first long edge of the pastry towards the centre, then do the same with the opposite edge, until both rolls meet in the middle, like a heart.
Chill this log for 10 minutes in the freezer, or 20 minutes in the fridge: well chilled, it will be much easier to slice cleanly.
Cut it into slices about 1 cm thick with a sharp knife, and lay them flat on the baking sheet, spaced apart, as the sugar will caramelise and run.
Bake for 12 to 15 minutes, flipping halfway through with a spatula, until nicely caramelised on both sides. Let cool on a rack before eating, the melted sugar is scorching hot.
