Ingredients
- Chicken — to buy2 breasts
- Cornstarch — to buy4 tbsp
- Egg — to buy1
- Garlic — to buy2 cloves
- Ginger — to buy1 piece
- Soy sauce — to buy3 tbsp
- Rice vinegar — to buy2 tbsp
- Honey — to buy2 tbsp
- Chili pepper — to buy1
- Neutral oil — to buy4 tbsp
- Spring onion — to buy2 stalks
Preparation
Cut the chicken into even 2 cm cubes, dip them in beaten egg, then coat them generously with cornstarch, pressing lightly with your fingers — that's what gives them their crispy crust.
Heat the oil over medium-high heat in a pan and fry the chicken cubes for 6-8 minutes, turning them regularly, until nicely crisp and cooked through. Set them aside on paper towel.
Meanwhile, mix the soy sauce, rice vinegar, honey and a splash of water in a bowl to make the sauce.
Quickly wipe out the pan with paper towel, then stir-fry the garlic, ginger and sliced chili for 30 seconds over medium heat, just until fragrant.
Pour the sauce into the pan and let it thicken for 1-2 minutes over low heat, stirring, until it coats the back of a spoon.
Return the chicken to the sauce off the heat, toss quickly to coat it without letting it go soggy.
Serve right away sprinkled with spring onion, while the chicken is still crispy.
