Chicken in Beninese peanut sauce

- Chicken — to buy1 kg (cut into pieces)
- Peanut paste — to buy150 g
- Tomato — to buy3
- Onion — to buy2
- Garlic — to buy2 cloves
- Chili pepper — to buy1
- Neutral oil — to buy2 tbsp
- Stock — to buy400 ml
- Salt — to buy1 tsp
Preparation
Season the chicken pieces with salt and pepper, then brown them on all sides for 10 minutes in the hot oil in a pot.
Set the chicken aside, then in the same pot sauté the sliced onion and chopped garlic for 4 minutes.
Add the blended tomatoes and chili, and let stew for 10 minutes over medium heat until the sauce thickens.
Thin the peanut paste with a little warm stock until you get a smooth cream, then stir it into the tomato sauce.
Return the chicken to the pot, pour in the rest of the stock, and stir to coat everything well.
Cover and simmer for 30 minutes over low heat, stirring occasionally, until the chicken is very tender and the sauce is smooth.
Adjust the seasoning and serve hot with plain rice or akassa.
