- Provolone — to buy300 g
- Olive oil — to buy1 c. à s.
- Oregano — to buy1 c. à c.
- Aleppo pepper flakes — to buy1 pincée
Preparation
Choose a fairly thick slice of provolone (2-3 cm) so it doesn't melt away completely before browning.
Heat a cast-iron pan or griddle over high heat, with no fat.
Place the cheese slice directly in the hot pan and cook for 2-3 minutes without touching it, until the underside forms a golden, crisp crust.
Gently flip the cheese with a thin spatula and cook the other side for 2 minutes, until molten in the centre but still held together by its crust.
Drizzle with olive oil, sprinkle with crumbled oregano and chilli flakes.
Serve immediately in the pan, with bread to scoop up the melted cheese.
