Chinese Smashed Cucumber Salad (China)

Ingredients
- Cucumber — to buy2
- Garlic — to buy2 cloves
- Rice vinegar — to buy2 tbsp
- Soy sauce — to buy1 tbsp
- Sesame oil — to buy1 tbsp
- Sugar — to buy1 tsp
- Chili pepper — to buy1
- Sesame seeds — to buy1 tsp
Preparation
Firmly crush the cucumbers with the flat of a knife or a rolling pin until they crack, then cut them into irregular chunks — this lets the marinade soak in far better than plain slices would.
Sprinkle with a pinch of salt, toss and let them sit in a colander for 10 minutes, then drain off the water they release well to keep the cucumber nice and crunchy.
Meanwhile, mix the crushed garlic, rice vinegar, soy sauce, sesame oil, sugar and sliced chili in a bowl to make the dressing.
Pour the dressing over the drained cucumbers, tossing well with your hands or a spoon to coat every piece.
Let marinate for at least 10 minutes in the fridge before serving — the longer you wait, the more the flavors soak in.
Sprinkle with sesame seeds just before serving, nice and chilled.
