- Chicken — to buy800 g
- Onion — to buy1
- Garlic — to buy3 cloves
- Cassava (yuca) — to buy400 g
- Potato — to buy400 g
- Plantain — to buy2
- Corn — to buy2 ears
- Fresh cilantro — to buy1 bunch
- Lime — to buy1
Preparation
Cook the chicken in a large pot of water with the onion and garlic for 20 minutes.
Add the cassava and potatoes, cut into large chunks, and cook for 15 minutes.
Add the plantain cut into thick chunks and the corn cut into chunks, simmer for another 20 minutes until all the vegetables are tender.
Add the chopped coriander in the last 5 minutes of cooking.
Adjust the seasoning with salt and pepper, the broth should be rich and fragrant.
Serve in large bowls with white rice on the side and a lime wedge, it is the Sunday family dish in Colombia.
